Father's Day weekend Mom, Dad, Will, Keith, and Scott came to visit us! It was so fun! We got to show off our new place and we just relaxed and had a good time. Mom and Dad brought me some things I had left at home, along with some new things! They brought us the chair that use to be Grandma Harston's, and a bucket of honey! I had asked Mom before if I could buy one off of her and she shouted (yes, shouted) NO! I didn't blame her, it's good honey from my Great Aunt and Uncle's Apiary (Queen Bee Gardens) and it isn't very often we have an opportunity to go pick up more. But my Mom was able to part with one of her precious buckets. I am definitely spoiled. I made homemade bread with it already and Dylan and I eat it on about everything! Thanks Mom and Dad!

A New Home

Dylan and I got the keys to our duplex on Saturday and moved everything in! Unfortunately we didn't have electricity until Monday....so after unloading and a some unpacking we headed back to Haines to Mom and Dad's for the rest of the weekend. We went to church and taught our primary class for the last time. Monday night we headed back to our apartment to discover our new stove had been delivered! Dylan and Dad brought it in....only to discover it didn't have the plug. We ate smoothies and salads all day Tuesday until Tuesday night Brother Weimer (our landlord) brought a plug over for us. Dylan installed the oven when he got home from work while I made crepe batter in the vitamix! What a delicious first dinner in our new home :)

Most of the unpacking and cleaning is done, but not all yet! I'll post more pictures of the new place once we get it how we like it!

Drum Roll Please!

Dylan got accepted to Eastern Oregon University for fall semester! I'm am so excited for him! He had to work hard to get here and I'm so proud of him. I'm excited that we will be going to school together! I love you Dylan. Thank you for being such a hard worker!

Apple Fajitas

I really wanted fajitas last night and wasn't sure how to approach it. I kinda just made up my own thing with what I found in the kitchen and a little help from the internet :)


1 onion
1 bell pepper
mushrooms
1 green apple
1 chicken breast
1 tablespoon cornstarch
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
a shake of dried cilantro
I also added a shake of the blend it up southwest spices from vitamix
(other things you could add: 2 teaspoon chili powder, 1/2 teaspoon onion powder)

slice veggies, apple, and chicken. mix spices.

sautee vegetables. when the veggies are done add the apple slices (sliced, then cut in half [the hamburger way]) and sautee for 3-5 minutes.

in the meantime, sautee chicken. add about 1/2 cup water and all the seasonings and let chicken simmer.

combine pans. enjoy!
